On Cheese |

Ideally, cheese should not be cut from the master wheel until it is ready to be consumed, as deterioration accelerates after being cut into smaller pieces. At Metropulos Fine Foods Merchant, you can sample your cheese before making the investment, and you’ll know which day it was cut because it was cut in front of you. We’ll give you pointers on how to store your cheese, great foods and wines to pair it with, and ideas for serving it. We fully believe that cheese is one of the greatest foods and we honor that distinction with proper care and handling. Most of our cheese selections are from farmstead cheese and artisan cheesemakers. If you need your cheese packed for travel, we’ll provide you with ice packs to keep it cool on it’s journey. |

Cheese is good for you. Did you know that:
Ï Cheese actually has less fat and more protein, vitamins and minerals per weight than an egg? Ï One pound of Parmigiano-Reggiano contains the nutritional equivalent of two gallons of milk. Additionally, because so much of the proteins break down during aging, it is easier than most proteins to digest. Point of reference, most animal proteins take about four hours to digest, but Parmesan only takes 45 minutes. This makes it an excellent source of energy for athletes, infants and the elderly. Ï Terroir—the oft-cited contributor to great grapes resulting in fine wines, is as important to authentic, artisan cheese-making as it is to wine? Think of goats climbing high alpine scrapple looking for the same wild flowers and grasses that their ancestors sought hundreds of years ago. The terrain, the climate, the soil, the pastures, all contribute to the final flavor of the cheese.
